You don't need to buy bottled teriyaki marinade when it's this easy to make from scratch.
When it comes to cooking, I'm no whiz in the kitchen. I like to keep things simple, clean and healthy. I've always loved Japanese food, and when I discovered how easy this favourite was to make, I had to share this. I prefer a gingery teriyaki, so I add more than mentioned below. That includes the sweetness. Add less or more honey or brown sugar according to your taste. I like to think of these types of recipes as guidelines and alter them accordingly.
SAUCE INGREDIENTS
1/2 cup Soy Sauce
1/4 cup Mirin
1/4 cup Sake
2 tbsp Honey
2 tbsp Brown Sugar
1 crushed Garlic clove
1 tsp crushed Ginger
OTHER:
500g Chicken
1 tsp Sesame oil
Optional sesame seeds as a garnish
METHOD:
Dice up the chicken and brown it in a saucepan with sesame oil. Leave aside.
Add all the sauce ingredients into another saucepan and bring to a simmer. Keep on low heat until you reach a thick consistency. Sometimes I add corn starch if I find the sauce too runny. Add the browned chicken to the sauce and cook for a further two minutes.
Serve with white rice and vegetables of your choice. I like to go with steamed Broccoli and Bok Choy.
If you decide to make the sauce on its own, you can store it in the fridge for up to a week and use it as a marinade.
